I love Halloween cookies. My kids love Halloween cookies. But (confession) I hate to bake Halloween cookies. I mean, let's just admit, it's a lot of work. That's why I love these dipped Oreo cookies. Hello low maintenance!

You will need:
Candy Melts (I found 'em at Hobby Lobby)
Coconut oil or Crisco (I prefer coconut oil)
Glow-in-the-dark eyes (found 'em at Hobby Lobby)
Popsicle sticks (optional)

Melt the candy melts and coconut oil in a double boiler, or just put a smaller pan in a bigger pan (ghetto style) like I did. The amount of coconut oil you use depends on the amount of candy melts you are using. Use about a tablespoon per cup of candy melts. The oil just makes the coating go on nice and smooth. Coconut oil solidifies when cooled so it's a healthier option (I say no to Cisco).
Drop in a Oreo and coat it with the mixture.
Lift the cookie with a fork and tap it on the edge of the pan. It should smooth out nicely. If it doesn't, add a little more oil.
Let them cool on wax or parchment paper. Add the glow-in-the-dark eyes when they are still wet.
The glowing eyes are my favorite part. My kids went NUTS for them. Just make sure you take them off before your kids dig in. Not recommenced for kids too young to understand that these eyes aren't edible.
I packaged them up cute and gave some to the neighbors.

I love that this little guy looks like he has a mouth! It was just a cracked Oreo. Fun right!
You could also stick some popsicle sticks in the Oreo filling before you dip them. Super cute! Just picture these stuck into a styrofoam block at a Halloween party... I will have to do that for sure.
