It's Summer time and my kids eat like crap in the Summer time! Please tell me I'm not the only one who refuses to cook! But don't worry, I still make sure they get nutrition. They eat lots of fruit but it's really hard to get them to choke down some veggies. Enter Green Smoothie Popsicles...
I have one of those fancy blenders that pulverize everything, but I have made these with a regular blender too and it works just fine.
Any green smoothie recipe should work, but here's what I did.
Green Smoothie Popsicles Recipe
1 handful greens (I freeze mine)
3 handfuls frozen fruit (I use a mix containing pineapple, strawberries and mango)
1 cup milk (soy, rice, coconut works just great too)
1 cup orange juice
1 Tbs vanilla
1/2 avocado
1 very ripe banana
Options: If it needs to be sweeter add a little squeeze of agave.
I feel like I have to prove to you that kids will actually eat these... so here you go...


The same kids that turn their noses up at the idea of a green smoothie are all over it when you call it a popsicle! Here's to a healthier Summer!!!
