Chia Seed Pudding Recipe

I have recently started loving Chia Seeds.  I love them for their nutrition and I even loved them for their texture.  I have a serious love for tapioca pudding!  In college, I gained a good 20 lbs that I fully attribute to my tapioca addiction.  That was a long time ago and I have since kicked the habit and lost the weight.  I don't even touch tapioca anymore because I know I will never stop.  That's why I love this pudding so much!  The flavor and texture are similar to tapioca... it's the perfect healthy tapioca alternative.

Maybe you have heard about the health benefits of Chia. "Use chia seeds in foods, not as a supplement, but as an alternative to processed grains like white bread because it is a much healthier whole grain that is great-tasting in foods like muffins," suggests Michael Roizen, MD, co-author of You Staying Young.  I have decided to cut down on the bread so Chia is a fabulous {and much healthier} choice.

It's a great source of omega-3 fatty acids and fiber. The high fiber content may slow down the absorption of sugars through the intestinal walls and into the blood, which is why some claim that it help you loose weight.  I just know that it makes me feel great!

Here's how to make your own Chia Seed Pudding:

1 Cup Coconut or Soy Milk {I use Vanilla flavored, either So Delicious or Silk brand}
3 Table Spoons of Chia Seeds
1/2 Table Spoon of Agave or other natural sweetener

Let the chia soak in the milk for 20-30 minutes.  The more you let them soak, the more the seeds absorb and expand.  I like to let them get as big as possible.  Stir every once in a while.  Add the sweetener when you're ready to eat.  Enjoy and be healthy!
